The 2021 harvest was in early August. Hot days and cool nights allowed the grapes to ripen to 23 brix. A minor acid addition was all that was required. Whole Cluster pressing and cold settled. 0% tank fermented, 50% barrel fermented in French oak. The wine was aged for 6 months in new French oak. We ensured a secondary fermentation to enhance the rich buttery flavor. Filtered and bottled 1 year after harvest

“This wine is rich and full-bodied, with aromas of ripe yellow apple, white peach, candied orange, and dried herbs. The midpalate has flavors of baked pear, cinnamon, buttercream, and lemon zest that weave into minerality and a dry finish. Pair with cream sauces.”
