The 2011 harvest was small, but excellent fruit. Lodi was blessed with warm days and cool nights, allowing the Cabernet grapes to mature. Brix at Harvest 24. Cold soaked for 3 days. Small lot fermented, over a period of 10 days. Aged in Charred Tennessee Bourbon Barrels for 6 months and then in French oak for 6 months. The final blend has touched 6% Merlot and 4% Petite Sirah to give it a big barrel-aged finish.
Tasting Notes
“Bold and full-bodied black plum, candied orange, creamy vanilla, and sandalwood aromas arise on the nose. The palate offers bramble blackberry, strawberry-rhubarb, fennel, lemon zest and maple. Lifted red fruits, cinnamon spice, and supple tannins show on the finish. Pair with smoked pork belly.”
